Roasted beetroot salad with smoked goat cheese and rocket
Oven-roasted beetroot turns sweet and tender, while smoked goat cheese gives the salad a smoky, salty contrast. A honey and apple cider vinegar dressing ties it all together – a salad that suits both an everyday dinner and a festive table.

Preparation
1Preheat the oven to 200 °C. Wash the beetroot, wrap each one in foil and roast for 50–60 minutes until a knife slides in easily.
2Let them cool, peel and cut into wedges or large cubes.
3For the dressing, whisk the oil, vinegar, honey, a pinch of salt and some pepper.
4Toss the beetroot with half of the dressing and leave for 10 minutes.
5Spread the rocket on a plate, arrange the beetroot on top and crumble over the goat cheese.
6Drizzle with the remaining dressing, scatter over the nuts or seeds and serve straight away.
