Honey layer cake with sour cream frosting
A classic honey cake with thin honey-baked layers and a soft sour cream frosting. It tastes best the next day, once the layers have fully soaked, so it is a handy cake to make ahead for a celebration.

Preparation
1In a bowl set over simmering water, melt the butter, sugar and honey, stirring for about 5 minutes until the sugar dissolves.
2Add the baking soda and stir until the mixture foams up and turns lighter.
3Take the bowl off the heat, let it cool slightly and beat in the eggs one at a time.
4Gradually work in the flour until you have a soft dough that no longer sticks. Divide it into 8 pieces.
5Roll each piece out thinly on baking paper, cut a 24 cm circle and bake at 180 °C for 4–5 minutes until golden. Bake the trimmings separately.
6Whisk the sour cream with the icing sugar.
7Stack the layers, spreading each one generously with the cream. Cover the top and sides too and sprinkle with the crushed trimmings.
8Leave the cake in the fridge for at least 8 hours or overnight.
